How do I set Global Variables to be used across multiple workflows?

I am wanting to set a global variable to be used across multiple workflows. This will be set once a Telegram trigger is run and then accessed in a different flow. It says on the n8n website that this is possible with the Pro plan. I have not upgraded yet as I want to make sure this is correct - I cannot find anything in the Docs which mentions this. If it is possible, what node/code do I need to use to achieve this?
