How to set the following Trigger rule in n8n. Do I want to trigger the automation only from Monday to Friday, in the interval from 10 am to 7 pm, triggering every 10 minutes?

for more complex time triggers, you can use “Custom (CRON)” as Trigger Interval.
With that you can use cron notation, which is quite powerful.
With your requirements, that would look something like that:
*/10 10-19 * * 1-5
