It’s great to see you’re interested about learning n8n!
I know this can be daunting as there are so many different integrations possible and a big part of the process is trial and error, which is time consuming. But I’ll try to give you some options that hopefully will help you get there more easily 
You mentioned that you’re aware of the courses in n8n’s site, I think you’re refering to our docs, but just in case I’ll add a link for our learning path here anyhow: Learning path | n8n Docs
Another great place to get more familiar with how to build workflows for your specific designs is browsing the Community and asking lots of questions as you build! You can also find all sorts of help while interacting with fellow users. A cool example of something you mentioned is this post from a couple of years back: N8n AI workflow maker
Then there is our very active Templates page, where users post workflows that they created with a particular goal in mind: n8n workflow templates Here you can search by topic and application and get an idea of what integrations can be used for what. And there is even a Newcomer essentials: learn by doing section.
We also carry an experts program, in which users can sign up to have an expert help them build applications and learn n8n: n8n experts
Then, outside of n8n you could maybe check out some Udemi courses and maybe you’ll find this tool interesting: https://www.phind.com - it’s an AI chatbot more directed towards developers - I think you might find its content useful in understanding the different API applications of different services and its suggestions on workflow building.
