I’m trying to change the sender name that appears in the recipient’s inbox. I’ve already tried using the format:

“Custom Name [email protected]”

in the “From” field, but it doesn’t work — the name is always the one configured in the Microsoft account, and not the custom one I specify.

Is there a way to override or set a custom sender name when sending emails through Outlook in n8n?

I think you cannot change the Email name, although you’re trying it manually with sending email.
So, nothing can you do to do that.
