I’m trying to build a simple flow that generates the current date and appends it in a Google Sheet. My problem is that in the Google Sheet, the date format appears as a string rather than a date.

Unfortunately you didn’t share your workflow or n8n version, so I am not sure which data exactly you are sending to Google Sheets and how.
But assuming you’re using a recent version of n8n and the Google Sheets node, my best guess is that you’re simply missing the “Cell Format” option here. Once you add it to your Google Sheets node and select the “Let Google Sheets format” option, the cells should appear as if you were typing this value directly into your sheet:
