Setting operation Delete on a Google Drive node deletes the file permanently. That file is indeed not found in Trash.
Is this wanted? If so, how can I move a file to the Trash so that I might be able to recover it?

It looks like API call we use deletes the file and doesn’t have an option to move to trash instead.
I have just found while doing a bit of digging that if you want to trash a file instead if you use the File Update operation under the Options there is a “Move to Trash” field which will do what you are after.
