Suppose If I need to capture data to google sheet means we have to provide a call-back URL and we need to authenticate by logging in whereas on the client-side how to do that? They won’t share their login details, right?

What do you mean? If you are taking data from a Google Sheet that you or your Google workplace owns you could use a service account for users in the domain.
