I was wondering if there was a similar functionality to Zapier’s Formatter Tool, which allows the transformation of data received from a trigger to output it differently from its source?

We currently don’t have a node that specifically does this. But if you’re want to format dates you can use the Date & Time node. Or you can use the Function node to format the data.
Having a node that just formats the data is a good idea. Maybe you can create a feature request explaing all the functionality that might be helpful!
