Did you have a look at the documentation for the Split In Batches node? It lists the expression to use in your IF node and also links to an example workflow.
There’s also a cool example workflow @harshil1712 wrote which combines all the items from multiple executions into a single one (meaning you’d have all the items back together after your loop). It can be found here:

You are spot on! I spent some time researching this and reading before making this post.
That being said I was focusing on the IF rather than the Split In Batches documentation.
This is exactly what I am looking for - great documentation and a good example to work off so I can make my own.
