I would like to know if there is any way to get the data in an excel table and update the specific line.
Or is it possible to just create new rows in the table?

What exactly do you want to do? How do you want to decide which row to update?
Is generally possible. What would have to be done is:
- read the whole file
- change the item (each row will become an item in n8n)
- save the file again
