I know that N8N has all data passed between nodes is an array of objects. But what are the nodes themselves doing in the process?

@jshecut , nodes do “what it say on the tin”. You can consider each node as a function with argument(s) that produces some output which is the result of that processing (read the documents for each node to get the details). Though I suspect the technical language does not appeal to you if you ask this kind of question. Perhaps I misunderstood what you are after. Then please elaborate.
