We are currently self-hosting n8n and just applied to be a reseller. Are we able to white-label our editor? Most likely none of our clients will ever access it, but I would love the editor to show our branding if we ever do a client demo.

Welcome to the community 
Technically yes you can change the branding if you use your own fork of n8n (there is a bit of info in the embed docs) but depending on how n8n is being used and potentially accessed by your users (that may never access it) you may need a different license to run it.
It could be worth emailing our license team to find out a bit more.
