Update Anthropic node to support new models

The idea is:

Please update the Anthropic chat node to support the latest models, e.g. claude-3-5-haiku-20241022

My use case:

Academic assistant

I think it would be beneficial to add this because:

The latest models are faster, cheaper, and better than the previous generation.

Any resources to support this?
