It would help if there was a node for:

My use case:

My sales team uses Granola AI to transcribe meeting contents and enhance meeting notes. I’d like to be able to use Granola in n8n so that I can take the meeting transcript to automatically draft follow up emails and generate meeting summaries.

Any resources to support this?

You shouldn’t expect this feature anytime soon. Here’s the source explaining the current status:

API support

We currently don’t have plans to support a public API. We’ve focussed first on Zapier as a solution to an open-ended integration, and want to learn more from how this is used.
