What exactly is being shared when we use the community edition? it asked for a license when I setup, does this mean the instances aren’t really private? is there a clear explanation of what telemetry or any sort of data being collected from the community edition?

The email they ask for is only to see how many people go from community edition to enterprise edition. They listed it somewhere when they announced the free extra features for the registered community “version”.
There is telemetry data to see what nodes are used and where people have issues with nodes and such. You can turn those off ofcourse, also the links provided by @solomon are of course a good read
